Italian-Style Hoagie Dip

Ingredients

  • 1/4 lb. deli turkey, chopped finely
  • 1/4 lb. pepperoni, chopped finely
  • 1/4 lb. deli ham, chopped finely
  • 1/4 lb. salami, chopped finely
  • 1/4 lb. provolone cheese, chopped finely
  • 1/2 head iceberg lettuce, shredded and chopped
  • 1/2 cup hot peppers, chopped (banana peppers work great, but feel free to go as spicy as you like)
  • 1 tomato, seeded and chopped
  • 1 onion, diced finely
  • 1/2 cup mayonnaise
  • 1 tsp. olive oil
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/2 tsp. red pepper flakes (if desired)

Directions

  • Combine the deli meats in a large bowl. Add in the provolone cheese, lettuce, hot peppers, tomato, and onion.
  • In a separate bowl, mix the mayonnaise, olive oil, basil, oregano, and red pepper flakes.
  • Stir the mayonnaise mixture into the deli meat mixture until everything is evenly coated.
  • Let it chill in the fridge for at least 30 minutes before serving.
  • Serve chilled with some steamed veggies, like broccoli or asparagus, for a fantastic low-carb snack.

 

Ham and Pineapple Picks with BBQ Glaze


Ingredients

  • 1 lb. deli ham
  • 2/3 cup of apple butter (store-bought)
  • 2/3 cup BBQ sauce (store-bought)
  • 1/2 pineapple, fresh
  • Toothpicks

Directions

  • Preheat your oven to 400°F.
  • In a bowl, combine the apple butter and BBQ sauce.
  • Cut the pineapple into small chunks; you should get about 24 pieces or so, depending on the size of the pineapple─or your appetite for them!
  • Assemble the picks by skewering the pineapple cubes and deli ham onto toothpicks. Brush the tops of each pick with the apple butter mixture.
  • Place on a parchment-lined baking sheet (standing up) and bake for 10 minutes, or until golden brown. Serve with any leftover sauce.

  • 1/2 lb. deli smoked ham, thinly sliced
  • 1/2 lb. deli turkey, thinly sliced
  • 4 oz. gouda cheese, cubed
  • 4 oz. cream cheese, cubed
  • 4 oz. sharp cheddar cheese cubes
  • Assorted crackers and chips (we like to use wheat thins and corn chips)
  • Assorted pickled vegetables (such as peppers, carrots, and cucumber slices)

Directions

  • Take a large board and begin arranging your ingredients in a creative, pleasing way. Start with your deli meats, laying them flat on the board and spreading them out to cover most of the surface.
  • Next, start adding cubes of cheese and continue to fill up empty areas until the entire board is covered nicely.
  • Add in crackers and chips, as well as any other accompaniments such as pickled vegetables. Once you're done arranging your board, serve immediately and enjoy!

 

Asparagus with Ham and Cheese


Instructions

  • 1.5 lbs. asparagus, ends trimmed
  • 1 cup ham, chopped finely
  • 1/2 cup Parmesan cheese, shredded
  • 1/2 cup Mozzarella cheese, shredded
  • 2 tbsp. olive oil
  • Salt
  • Pepper

Directions

  • Preheat your oven to 400°F.
  • Place the asparagus onto a baking sheet. Drizzle the asparagus with olive oil, then season them with salt and pepper.
  • Roast the asparagus, uncovered, for 10 or so minutes, or until just tender.
  • Take the tray out of the oven and cover it with the chopped ham, Parmesan cheese, and Mozzarella cheese.
  • Return to the oven for 8-10 minutes more until the cheese is melted and bubbly. Serve hot!

 

Buddig Pinwheels

Ingredients

  • 2 packages (2 oz. each) Buddig Sliced Beef or Ham
  • 1 package (8 oz.) cream cheese, softened
  • 1 tsp. horseradish
  • 1 tbsp. onion, grated
  • Worcestershire sauce, to taste

Directions

  • In a medium bowl, mix the cream cheese, horseradish, onion, and Worcestershire sauce until blended.
  • On a large cutting board or flat surface, lay out two slices of Buddig Sliced Beef or Ham side by side, slightly overlapping.
  • Spread the cream cheese mixture onto the meat slices, leaving a small border around the edges.
  • Roll up tight like a burrito, using a toothpick to secure the ends.
  • Repeat for the remaining Buddig Sliced Beef or Ham.
  • Refrigerate, covered, for at least 2 hours. Once chilled, slice pinwheels into 1" slices and serve with your favorite low-carb crackers or some steamed veggies for one of the easiest—and most filling—low-carb snacks out there!
