- 1 cup low-fat hummus (recipe above)
- 1/2 can black beans, drained and rinsed

- 1/2 can corn, drained and rinsed
- 4 oz. Shiitake mushrooms, sliced thinly
- 2 large wraps
- 1 bell pepper, seeded and chopped
- 1 onion, chopped
- 1/2 package fresh spinach
- 1 poblano pepper, roasted and cut into thin strips
- 1/2 cup guacamole
- 1/2 cup salsa
Directions
- Preheat your oven to 450°F.
- In a pan, sauté the onion until translucent then add the bell pepper, cooking for around 2 to 3 minutes.
- Add the corn and mushrooms and cook for an additional 3 minutes.
- Lay out the wraps then spread the hummus over each one. Top with black beans, turkey/chicken, sautéed vegetables, spinach, and poblano pepper strips.
- Roll up tightly then place the wraps on a baking sheet, with the seam side down. Bake for around 10 minutes, or until the wraps are lightly toasted and crispy.
- Remove from the oven and let cool before slicing into 1-inch segments. Serve with guacamole and salsa.
