Antipasto Salad

Ingredients

  • 1 pkg Azteca Crispy Salad Shells
  • 8 oz Buddig Original Ham or Premium Deli Smoked Ham - (sliced in 1/2" strips)
  • 8 oz Buddig Original or Premium Deli Roast Beef - (sliced in 1/2" strips)
  • 8 oz Buddig Original or Premium Deli Oven-Roasted Turkey - (sliced in 1/2"" strips)
  • 2 head romaine lettuce - chopped
  • 1 cup red bell pepper - roasted ½" dice
  • 8 oz mild giardiniera peppers - 1 cup – well drained – reserve oil for dressing
  • 4 oz provolone cheese - sliced in 1/2" strips
  • 4 oz mozzarella cheese - cut into 1/2" cubes
  • ¼ cup balsamic vinegar
  • ½ ea lemon - juiced
  • 2 oz olive oil - to add to giardiniera oil as needed
  • ½ oz Italian seasoning
  • Salt to taste

Directions:

  • Follow instructions on package for Azteca Crispy Salad Shells.
  • Add balsamic vinegar, lemon juice and Italian season to a small bowl. Whisk together and drizzle in giardinara oil to properly emulsify dressing (use additional olive oil if needed). Season with salt to taste.
  • In a large bowl, add lettuce, diced roasted red peppers, drained giardinara peppers, half of the meats, half of the cheeses and half of the balsamic vinaigrette dressing. Mix well.
  • Transfer salad to Azteca Crispy Salad Shells, decorate each salad with remaining meats and cheeses and drizzle with remaining balsamic vinaigrette dressing.
  • Serve!
